Freezing? Warm Up with Hearty Chili

As I type here at my desk, my fingers feeling a bit numb, I thought about which of my favorite recipes would be best for dinner tonight. Of course I thought of Hearty Chili. As I typed it, I realized how ironic its name is! But yes, chili can indeed warm you up!

Mommy MD Guides, Freezing? Warm Up with Hearty Chili

My coauthor and business partner, Rallie McAllister, MD, MPH, shared this recipe, and we included it in our new book: The Mommy MD Guide to Losing Weight and Feeling Great. In the spirit of helping to warm chilly mom everywhere, I wanted to share it with you! This recipe has a lot of ingredients, but it really is easy to make. I like to make it and then transfer it to a Crock-Pot for the flavors to blend for a few hours.

Hearty Chili


2 cans (14.5 ounces each) stewed tomatoes
2 cans (6 ounces each) tomato paste
2 carrots, thinly sliced
1 white onion, chopped
2 stalks celery, chopped
1/4 cup white wine
Pinch of crushed red-pepper flakes
1 green bell pepper, chopped
1 red bell pepper, chopped
1/3 cup steak sauce
5 slices bacon
11/2 pounds extra-lean ground beef
1 package (1.25 ounces) chili seasoning
2 cans (15 ounces each) light red kidney beans, rinsed and drained


In a large pot, combine the tomatoes, tomato paste, carrots, onion, celery, wine, pepper flakes, green and red peppers, and steak sauce.

Bring to a boil over medium-high heat, then reduce the heat to medium-low.  Simmer for about 30 minutes.

Meanwhile, in a large skillet, cook the bacon until crisp. Drain and crumble. Set aside.

In the same skillet over medium heat, cook the beef in the bacon drippings, breaking it up with a wooden spoon, until the beef is cooked through, about 8 minutes. Stir in the chili seasoning. Stir the bacon and beef into the vegetables. Add the beans and cook until heated through.

Makes 6 servings

Per serving: 411 calories, 43 g carbohydrates, 37 g protein, 10 g fat, 10 g fiber
